Sunday scrambled eggs

Ingredients:
1 Comfy robe
1 Rhapsody in Blue, George Gershwin
1 Lord of the Rings: Fellowship of the Ring soundtrack
1 Sunday newspaper (to taste — here it’s The Register-Guard)
4 chanterelle mushrooms (especially loved in Oregon), cut to bits

3 wee chilis (optional), chopped
2 small tomatoes, diced
1/2 green bell pepper, diced
2 eggs
Bit of milk
2 tsp sage, minced
Black pepper to taste

  1. It’s Sunday, bugger olive-oil-only rule. Heat lots of butter on medium in omelet pan. Add chanterelles, half the sage, 1 of the wee chilis and get some fresh black pepper cracking over those babies.

  2. After a few minutes, add bell pepper, tomatoes, rest of sage and chilis. Saute for a few, while you wisk eggs and milk. Chuck in a few chili flakes, just to surprise yourself. If still feeling groggy from Saturday night, put a couple on your tongue.
  3. Stir the veggies, then wash knife and cutting board. Add eggs and milk mixture to pan. Let rest a bit while you dry knife and cutting board.
  4. Stir occasionally. Sniff often — this stuff smells really good, after all.
  5. Crack open the paper, then pour some juice/ coffee/ tea/ Bloody Mary.
  6. Enjoy.

Goes quite nicely with biscuits.
